Sweet proteins like monellin, recently recognized as safe by the U.S. Food and Drug Administration (FDA), mimic sugar's taste but do not affect blood sugar levels, insulin response, or the gut microbiome.

 

This FDA approval follows a similar milestone earlier this year for brazzein, another protein on Oobli’s platform. These sweet proteins, derived from fruits native to West Africa and other equatorial regions, are produced sustainably through fermentation, requiring significantly less land, water, and carbon than traditional sugar production.

The GRAS (Generally Recognized as Safe) designation positions Oobli as a leader in natural sweeteners and accelerates its ability to collaborate with global food companies.

 

These approvals pave the way for Oobli’s sweet proteins to replace up to 70% of sugar in a variety of products, including sodas, baked goods, candies, and more, offering healthier choices for consumers worldwide.

Oobli recently strengthened its leadership team by appointing Dr. Geoffrey Duyk and Heather Malenshek to its Board of Directors.
